CROCKPOT "LASAGNA", Garlic Bread & Salad



Serve with hot Garlic bread and a side salad with stuff left from your Tacos fixings!


GROCERY LIST FOR Week of January 27-31, 2014

6 boneless & Skinless Chicken Breast. (I'm using the frozen chicken I have left from previous weeks menu)
1 lb  Ground Beef x 2
1 lb small red potatoes (about 4-5)
1 large onion
Head of Lettuce
2 tomatoes 
2 small avocado - and whatever else you like on your taco and in a salad 
1 envelope Taco Seasoning
1 Jar of Salsa
1 can Cream of Mushroom Soup
1 can Diced Tomatoes & Green Chilis
1 can Yellow Corn
1 can Red Kidney Beans
1 Jar 24oz Spaghetti Sauce
1 small box Lasagna Noodles

1 8oz package shredded Cheddar
1 8oz package shredded Mozzarella Cheese
1 4oz package shredded Parmesan Cheese
1 15oz Tub Ricotta Cheese
1 loaf Garlic Bread (HEB Frozen)
1 package Honey Sweet Cornbread
1 package HEB freshly made Flour Tortillas

Staples Needed:
Salt, Pepper, eggs, butter, Milk, salad dressing

Thursday & Friday - I will be out of town in Vegas celebrating my middles 21st Birthday and seeing the King!  That's of Country Music...not Elvis!  Lol

But you should have plenty of leftovers:)

STOVE TOP "CHICKEN CHILI" & FRIED TORTILLA STRIPS





FRIED TORTILLA STRIPS

DIRECTIONS:
Put a small amount of Wesson Oil in a small skillet
Cut your Tortillas into large strips (4 per tortilla)
And fry in grease flipping once til golden brown and crunchy
Remove onto paper towel
Salt Immediately
I usually fry about 10 cut up tortillas

2 lbs Stew Meat
1 Rotisere Cooked Chicken  (from the deli)
3 lbs Boneless Pork Shoulder for Carnitas
Boneless Shoulder Roast
4 frozen Chicken Breast (left over from last weeks meals)

Hamburger Buns
10 Ct Flour Tortillas

3 cans Chicken Broth
1 can Beef Broth
2 cans Condenced Golden Mushroom Soup
1 Can Cream of Mushroom Soup
1 Can Cream of Celery Soup
1 Can Cream of Chicken Soup
1 bottle HEB BBQ Sauce
2 cans White & Yellow Corn Mix
1 can Yellow Corn
2 Cans Great Northern Beans
1 Small Can of Chopped Green Chilis
2 cans ROOTBEER
Small Jar Sliced Pickles
Small Package Panko Bread Crumbs
1 Bag Frozen Tator Tots
1 Bag Wide Egg Noodles
1 Small Bag Elbow Macaroni
1 Cream Cheese
1 Small Sour Cream
1 - 8 Oz Package Shredded Sharp Cheddar Cheese
4 Onions
1 Fresh Carton mushrooms
Small Bag of Texas Russett Potatoes
Bunch of Cilantro
2 Avacados
1 Lime

Total cost I spent for above was:  $53.70.  I went over by $3.70 OOPS!!!  But we are HAVING Roast and Rotisserie Chicken this week:)))




I already had the following Staples, but that you may need to purchase:

CHIK-FIL-A DIPPING SAUCE



CHIK-FIL-A NUGGETS




HOMEMADE MACARONI & CHEESE

You can boil your Pasta and mix this all up and refrigerate the night before!
Remove it from the fridge, top with Panko and Stick in the oven when you walk in the door:)

TATOR TOT CAKES



Place your frozen TOTS on the waffle iron and proceed
We will sprinkle with some SEA SALT before we Waffle Iron:)

CROCK POT "BEEF STROGANOFF"






Will Serve with a Side Salad

FRIED CORN

Ingredients:

2 cans Mixed White & Yellow Corn
1 small onion
4 slices bacon

DIRECTIONS:

Drain cans of Corn and set aside
Chop up onion
Cut up bacon into bits

In an Iron Skillet
Fry bacon til almost Crisp and add Onion frying til light
Add drained corn and 4 TBSP butter, salt and pepper and stir
Cook on low for about 5 min then add milk til almost covering Corn. About 2 cups
Continue to simmer approx 15-20 min.

OH SO GOOD!!!

Thursday - CROCK POT "BEEF STROGANOFF" & Garden Salad

Friday - CHIK-FIL-A NUGGETS with Dipping Sauce & TATOR TOT CAKES

Cooking Implements needed for these recipes:
CROCK POT
SKILLET
WAFFLE MAKER for Tator Tot Cakes or you can just bake them
COFFEE POT

CROCK POT "COFFEE POT ROAST" & MASHED POTATOES

Ingredients:
Roast
4 cups hot coffee
1 can Cream of Mushroom
1 can Cream of Chicken
1 can Cream of Celery
Salt & Pepper
5 potatoes
Butter
Milk

Directions for Roast:

Cut up roast in to thirds and place in Crock Pot
Salt & Pepper
Add Coffee & Soups

Cook on low for 6-8 hours

Meat should fall apart easily with fork and roast will make an awesome gravy for your mashed potatoes.

Directions for Mashed Potatoes: (will cut up potatoes night before, cover with water and set in fridge and then boil when you get home)

Boil potatoes til tender
Drain and return to pot
Add 3-4 TBSP Butter
Salt & Pepper
Mash and add milk til creamy.
I like to add a few chunks of softened cream cheese if you have some extra in the fridge

Fried Rice Recipe to go with Pepper Steak

Fried Rice

Cook rice according to microwave directions

Scramble 2-3 eggs in a bowl

Chop up green onions 

Put 2 tablespoons butter into a coated skillet and melt on low,
Add some minced garlic (if you have some. I forgot to add to grocery list. It's a staple in my house:) and sauté for a few minutes. 

Add to butter and garlic -  eggs, rice and onions and cook on low stirring frequently until the rice is popping and and butter has been obsorbed. About 10. Minutes. You are gonna want to add a little salt as well. 

3 Deserts For under $6 Total

Nonny's Banana Pudding


Peach Cobbler

I did my shopping today at HEB and this week used only their sales ad and in store Coupons and purchased everything on the Grocery List. I did not use anything I already had in my Pantry that's on the list as to have an accurate cost this time.
I'm sure you could come close to the items I purchased in cost at Walmart or Trader Joes if you prefer to shop somewhere else. I just like HEB as they offer so many FREE items!

HEB frozen Chicken Thighs
Mild Italian Sausage
1 lb Thin Sliced Beef Top Sirloin
Small Buitoni Tortellini Three Cheese
Small Buitoni Tortellini Spinach and Cheese
HEB Tortilla Chips
1 can Diced Tomatoes & Green Chilis
2 cans Diced Italian Tomatoes
1 can Stewed Tomatoes
3 cans Cream of Chicken Soup
1 can Cream of Mushroom Soup
2 cans of Chicken Broth
1 can of Beef Broth
1 Box of Vegetable Broth
1 jar Marinara Sauce
1 Package Thin Spaghetti
1 small package Crushed Red Pepper
I package Muffin mix
1 frozen 5 min Microwave HEB white rice
1 frozen box Green Giant chopped spinach (Or fresh spinach as the recipe calls for)
1 HEB Cream Cheese
2 Cans HEB Biscuits
2 cups Shredded Mexi Blend Cheese
6 medium White Onions
2 fresh Garlic Bulbs
4 Bell Peppers
1 bunch Green Onions
2 HEB Pantry French Bread Baguettes. (I got mine free with a deal)

The Total Cost for these 5 Meals is: $49.60!!!!  WOO-HOO

Now you will have a few HEB Frozen Chicken Breast and Frozen Chicken Thighs left over in your Freezer and we will use those next week in one of our Meals:))

Remember the Staples you will need to have on hand from here on out!

Now for Desert for 3 of the 5 nights:
*Nonny's Banana Pudding - Bananas, HEB Nilla Wafers and Vanilla Extract (remaining ingredients are Staples)

*Peach Cobbler - Lousiana Mix and 1 Can Peaches

Ok Friends...per your request...I created this blog to Post my "Weekly Meal Menu" on a Budget for you to follow:).

My Goal is to prepare Home Cooked Meals for 4-6 people for $10 a Meal!!  And to use my CROCK POT as often as possible!!!  So if you don't have one...run to Walmart cause your gonna need one and it's less than $20. Who doesn't want to throw everything in a pot...go to work...and come home 8 hours later to Dinner Ready to Serve???

Some Meals will cost less than $10 and some maybe more.  But no more than $50 for all 5 Meals!

I will also include a few Deserts....:)))

My weekly choices will be based on what's in season and on sale in my weekly HEB ad.  I love HEB for their "BUY this Item and get these 6 items FREE!!!"  And I'm a firm believer in Coupons!!  In your Sunday Paper or at Coupons.com:)

I will Post each Friday the following Weeks Meals that I will be cooking along with the Recipes, Grocery List and Cost. All you have to do is Grocery Shop over the weekend!

Some of the Recipes will be my Families Favorites and some will be New Ones I will be trying for the first time!!!

For some crazy reason I'm excited about this!!!  LOL
I do love to cook and save money!
